Easy Chocolate Cookies

With the national lock-down looming for South Africa, don’t forget to add chocolate and baking goods to your grocery list.

If you have kids, baking is a fun activity to do together PLUS, chocolate is known for its ability to increase levels of the calming neurotransmitter serotonin. That makes chocolate an essential right now!

I love making chocolate chip cookies and this recipe is simple, when adhered to, and doesn’t take long at all. No silly freezing time. No burning butter or using five different types of flour and sugar.

Ingredients:
  1. 1 cup butter that has been lightly softened
  2. 1 cup white sugar
  3. 1 cup light brown sugar
  4. 2 tsp vanilla extract
  5. 2 large eggs
  6. 3 cups plain flour
  7. 1 tsp baking soda
  8. ½ tsp baking powder
  9. 1 tsp sea salt
  10. 2 bars of Cadburys 80g chocolate cut into small shards and chunks. You can add way more chocolate than this if you need to 😉
Method:
  • Preheat oven to 180 degrees and line a baking tray with baking paper
  • In one bowl, mix flour, baking soda, salt, baking powder. Set aside.
  • Cream together butter and sugars until combined. If the mixture is too runny because you overly softened the butter, put the mixture in the fridge for a bit.
  • Beat in eggs and vanilla until fluffy.
  • Mix in the dry ingredients until combined. Don’t overwork but make sure there are no flour chunks.
  • Mix in the chocolate – try not to eat it all.
  • Roll tbs of dough into balls and place them evenly spaced on your prepared cookie sheets.
  • Bake in preheated oven for approximately 8-10 minutes. Take them out when they just, JUST, look brown. DO NOT OVER BAKE.
  • Let them sit on the baking pan for 2 minutes before removing to cooling rack.
  • Pretend you’re not going to eat them all in one sitting.

And that is it. Simple and delicious.
